Red Potatoes with Mustard Vinaigrette


RED POTATOES WITH MUSTARD VINAIGRETTE
3 lbs red potatoes, halved or quartered
1 T brown mustard
1/2 C olive oil
3 T vinegar
1 clove garlic, minced
1 T Italian parsley, chopped
Salt & pepper

Preheat the oven to 400 degrees.  Lay the potatoes on a sheet pan in a single layer.  Bake for about 35-40 minutes or until fork tender.

Meanwhile, mix the remaining ingredients together with a whisk.  Pour the dressing over the potatoes and toss.  Serve warm.

    1. Thanks for asking, Chaundra. I used white vinegar, but I bet any flavor would be good, apple cider, balsamic, champagne. Pick your favorite! Let me know how it turns out!
