JALAPENO POPPER STUFFED EVERYTHING PRETZELS
As adapted from Cooking for Keeps
FOR THE PRETZELS:
2 packages highly active yeast
1 T sugar
1 1/4 to 1 1/2 C warm water, 110 to 115 degrees
4 1/2 C flour
1 teaspoon salt
2 T olive oil
1/2 C baking soda
FOR THE FILLING:
8 ounces cream cheese, softened
4 slices bacon, cooked and crumbled
1/4 C shredded Parmesan cheese
1/2 C shredded cheddar cheese
1 T garlic powder
2-3 T chopped jalapeno slices (the kind from a jar)
FOR THE EVERYTHING SEASONING:
1 T garlic powder
1 T poppy seeds
1 T minced onion
1 T sesame seeds
1/2 T salt
For the pretzel dough, dissolve the yeast and sugar in the warm water in the bowl of a stand mixer. Let it sit about five minutes until frothy. Add in the flour, salt, and olive oil. Knead with a dough hook until it becomes a ball. Add the additional water if the dough is dry. Place in a large greased bowl and cover. Let it sit at least an hour or until it rises to double its original size.
Meanwhile, blend the filling ingredients in a food processor and set aside. Mix the Everything Seasoning together in a small bowl and set aside.
When the dough has risen, divide it into six sections. Roll each section into a "snake" or tube shape. Take a rolling pin and roll each snake to about 1 inch wide. Divide your filling into roughly six portions. Spread the filling down the center of the flattened snake, making sure to leave a little space on the sides to seal up the pretzel. Close the dough around the filling and roll again into a tube or snake. Twist the ends over themselves to look like a pretzel. Place them on a sheet pan sprinkled with cornmeal. Cover and let them rise again for about 20-30 minutes.
Preheat the oven 450 degrees. Bring a large pot of water to boil. Add in the baking soda. Carefully drop a pretzel in and boil about 30 seconds, flipping it over halfway through. Place them back on the sheet pan and sprinkle the everything seasoning on top. Repeat with the remaining pretzels. Bake each pretzel 20-30 minutes or until well browned on top.
