Cheesy Cauliflower Tots

I made these Cheesy Cauliflower Tots not to fool my family into thinking they were potatoes, but because I had an abundance of cauliflower from my latest Bountiful Baskets purchase.  And you know what?  While they don't taste at all like tater tots, they were pretty darn good!

CHEESY CAULIFLOWER TOTS
3 C fresh cauliflower florets (about 1 medium head)
2 eggs
1/2 C shredded cheese (your choice)
2 C breadcrumbs
Salt & pepper, to taste

Preheat the oven to 400 degrees.  Boil the cauliflower until tender.  Drain very well on a towel.  Put the cauliflower in a bowl and mash very well with a fork.  Stir in the remaining ingredients.  Using your hands, roll and shape about 1 1/2 T of the mixture into tater tot shapes.  Place them on a sheet pan and bake about 25 minutes or until firm and golden brown.

    1. Hi, Stelios. Tater tots are a shredded potato mixture that is pressed back together and baked or fried in shapes similar to the picture above. Definitely an American treat, especially with kids. Enjoy!

  2. We love cauliflower in general we even eat it raw in mini florets with dips. Your idea sounds very good as a tapa especially with some jalapeƱos in the mix before baking. Will definitely bear in mind for tapas.
