Cheesy Artichoke Cups

Here is a recipe I used to make a long time ago that I got out of an old Pampered Chef cookbook.  I had forgotten about these little jewels!  Cheesy Artichoke Cups are easy and very delicious.

As adapted from Pampered Chef
One 14-ounce can artichokes, drained and chopped
24 wonton wrappers
1/4 C chopped red bell pepper
1/4 C chopped black olives
1/2 C mayonnaise
1/4 C shredded Parmesan cheese
1/2 C shredded Pepper Jack cheese
1 clove garlic, minced

Preheat the oven to 350 degrees.  Lightly spray a mini muffin tin with pan spray.  Push the wontons down into each muffin tin.  Combine the remaining ingredients together in a bowl and fill each wonton with the filling.  Bake them about 15 minutes until browned and the filling is bubbly.
