Dutch Baby


This is a very easy to make German style pancake that is baked in the oven.  It's like a sweet popover.  It puffs up huge in the oven, and it's fun to watch it grow, especially for kids. You can serve it with fresh fruit like berries, strawberries, and bananas, or you can serve it with powdered sugar or syrup. It does deflate quite a bit after removing it from the oven, so don't be surprised if it doesn't stay puffed up.  Enjoy!

DUTCH BABY
6 eggs
1 C flour
1 C milk
2 T sugar
1 teaspoon vanilla
1/2 teaspoon cinnamon
1/2 stick butter

OPTIONAL FOR SERVING:
Sliced bananas
Sliced strawberries
Fresh berries, like blueberries or raspberries
Syrup
Powdered sugar

Preheat the oven to 450 degrees.  Put the butter in a large skillet (preferably cast iron) and place it in the oven to melt.  

Whisk together the eggs, milk, flour, vanilla, sugar, and cinnamon.  When the butter has melted, pour the mixture into the skillet. Bake for 20-25 minutes or until the center has puffed and looks done.

  1. I make these both for desserts and breakfasts. Besides fruit, I also use whipped cream, powdered sugar, or pancake syrup. So simple, but super tasty!
