Marinated Cheese Platter

This is a very pretty dish that is easy to make for any holiday gathering.  This is a Marinated Cheese Platter.  You can mix and match the cheeses and use different varieties.  Served with crackers, it's the perfect appetizer or snack!

One 8-ounce block Pepper Jack cheese
One 8-ounce block Cheddar cheese
One 8-ounce block Monterrey Jack cheese
1/2 C vegetable oil (or olive oil)
1/4 C white wine vinegar
One packet Good Seasons Zesty Italian dressing mix
2 T sliced green onions
2 T chopped parsley
2 cloves garlic, minced
Red chili flakes, to taste

Whisk together the dressing mix, oil, vinegar, green onions, parsley, garlic, and chili flakes.  Set aside.

Slice the blocks of cheese in half longways.  Then slice them into 1/4 inch squares, trying to be very uniform.  Arrange the cheese on a platter.  Pour the marinade over the top of the cheese.  Cover and chill for at least 2 hours and up to overnight.  Serve with crackers.
